THE WONDERFOOD SPELT

An introduction to the ancient grain known as Triticum spelta and otherwise known as Spelt or Dinkel. The author cites research studies conducted in Germany regarding case studies of chronically ill patients and changes noted therein once they are introduced to a spelt-based diet. Nutritional qualities of spelt are compared with other cereal grains. The overall advantages are evident in the amino acid content, the high level of complex carbohydrates, B vitamins, and in minerals and trace elements. The popularity of the grain is traced from its origins in the middle east through western European civilizations, to its introduction in North America in 1988. There are 18 basic recipes.
